The kitchen is guided by local fishermen and producers who know the sea not just as a resource, but as a way of life. The catch arrives fresh each morning, from Adriatic fish to tender shellfish and delicate crustaceans, then transformed into not-to-miss dishes like the seafood tower, Cigale brodetto, lobster alla buzara with house-made pasta, and fish grilled or salt-baked to perfection.

The winery is located near Vižinada, in north-western Istria, surrounded by rolling hills, vineyards, and olive groves. This area is known for its unique combination of red and white soils, gentle sea breezes, and a mild Mediterranean climate—ideal conditions for viticulture. From the winery, visitors can enjoy sweeping views of the Mirna River valley and the Istrian countryside.

Deklić Winery spans nearly 3,000 square meters, thoughtfully designed to combine cutting-edge technology with spatial elegance. The lowest level is the heart of production – where tradition and innovation meet in the process of winemaking. Equipped with the latest technology, this area enables grape processing and wine aging in stainless steel tanks, concrete eggs, wooden barrels, and Georgian amphorae.
Thanks to a gravity-fed production system, every step – from pressing and fermentation to maceration and maturation – flows naturally with minimal intervention. Every line of the space, every material and every detail is carefully considered to serve the wine’s purity, character, and authenticity.
